The grapes transformation takes place following
a distinct protocol which begins with a careful choice during
harvesting when only fruit of optimum ripeness is picked, followed
by a light pressing and fermentation. All stages are constantly
under Stefano Bonotto, the estate's winemaker's expert eye. Each
vat is connected to a computer which monitors its temperature,
intervening in any eventuality by cooling or heating the vats
contents. Vinification is meticulously guided by technology which
ranges from cryomaceration to the wine's fining in barriques in
specially created rooms equipped with air-conditioning and vaporisation.
Here in the cellar too, as in the vineyard, the estate can count
on expert wine maker, Stefano Chioccioli's precious collaboration.
The severity and attention to even the slightest detail ensure
that the aromatic properties generated in the vineyard remain
in tact, and are concentrated in the high and ever reliable quality
of the contents of the bottle.
